The Swiss Marché Restaurants have a new mission – to create and support dining spaces that allow only the use of food that’s been sourced locally – thus retaining it’s freshness. Here’s to a fresh “locavorous” idea!
Ever sat down over a culinary spread fit for kings, at the fanciest restaurant you can find, and wondered why your ravioli smells a bit iffy? Or maybe after hearing repeated pings from the kitchen (sounding suspiciously like a microwave) you eyed your prawn tempura with some doubt. Or have you wondered how the fresh juice you asked for could be “fresh” when it’s blatantly an out-of-season fruit?
Marché Restaurants is busy removing the niggling doubts patrons have. Gastronomy experts, whether actually in the restaurant business or simply patrons, will tell you the commonest problem, after the waiter’s finger-in-soup deal, is freshness – both of the ingredients and of the final dish. Created by the Swiss, the Marché Restaurants are synonymous with the crispy freshness of the snowy Alps and promise to remove any hint of the suspicion that plagues you even at your favourite restaurants and eateries.
An offshoot of famous ice cream makers Movenpick, Marché aims to (in the words of Oliver Altherr, CEO Marche International) “become the freshest gastronomy business in all of Europe.” And it isn’t just Europe. Marché restaurants have spread their freshness through countries like Canada, Austria, Germany, Hungary and even Singapore. Their products are all selected according to what is fresh and currently available in the local marketplace, and meals are prepared right under the watchful eyes of guests. Pioneers in a concept called “front-cooking”, their stringent requirements include radical freshness, home-made recipes and a gentle, last-minute preparation of seasonally-available goods. Choose from a mouthwatering variety of home-made ravioli, pizzas and tempura, classical offerings from the wood-fire open grill, Swiss hash browns, salad and vegetable buffets and hand-pressed fruit juices – all healthy, fresh and fast!
